Last Minute Christmas Recipes
It’s Christmas Eve, so I’m sure you are rushing around getting last minute gifts and getting ready for tomorrow. For some reason every year, you’re always behind on something. Have no idea what to bring to your family party tomorrow (besides wine) and short on time? While you’re playing bumper cars with shopping carts at your local supermarket, keep in mind that these simple and easy recipes are crowd pleasers on the holidays:
Chocolate Pretzels
Ok so this is the most basic of holiday desserts ever aka Aunt Karen’s ‘specialty’ but they are SO easy to make and everyone loves them. These salty and sweet treats are delicious!
Ingredients:
- Snyders Pretzel Snappers
- Hershey Kisses
- Red and Green M&M’s
Preheat the oven to 350 degrees. Place a Hershey Kiss on each pretzel and bake for 2-3 min or until the kiss is melted. Take out of the oven and place an M&M on top of each kiss. Refrigerate overnight and there you have it!
Christmas Tree Roll Ups
Refreshing, delicious and festive!
Ingredients:
- 8oz Package of Cream Cheese
- ½ cup of Roasted Red Pepper
- ¼ cup of Chopped Olives
- ¼ cup of Chopped Basil Leaves
- ¼ cup of Shredded Parmesan Cheese
- 4 8-10 inch Spinach-Flour Tortillas
- Ripe Olive Pieces
Mix all of the ingredients besides the olive pieces and tortillas in a bowl. Spread the mixture onto the tortilla, covering the whole thing. Roll up tightly. Press each tortilla roll into a triangle shape. Wrap in Saran wrap and refrigerate for at least 2 hours. Then, cut the roll up into ½ inch slices and place an olive at the bottom of the “tree”. Secure with a toothpick and serve!
Antipasto Wreath
Creamy, Festive, and Creamy.
Ingredients:
- 1 8 oz Package of Cream Cheese
- ½ cup of Grated Cheese
- ¼ cup of Chopped Black Olives
- 2 Tbsp. Chopped Fresh Basil
- 6 Tbsp. Chopped Roasted Red Peppers
- 1 Tbsp. Chopped Fresh Parsley
- Assorted Crackers
Mix the first five ingredients and 2 Tbsp. peppers until blended. Shape into a log, approximately 16 inches. Refrigerate for at least one hour. Form the log into a wreath shape on a large serving plate. Top it with the parsley and peppers. Take a picture before it gets demolished!
Red Velvet Cupcakes
These are always a hit. You’re low on time, so it’s ok to buy the premix at the supermarket. What really counts is the cream cheese frosting. Here are the ingredients you need for the frosting:
Ingredients:
- ½ cup of butter
- 8 ounces of Cream Cheese
- 4 cups of Confectioners’ Sugar
- 2 Teaspoons Vanilla Extract
Beat the butter and cream cheese together until well blended. Add the sugar and vanilla extract until the mix is creamy. Wait for those cupcakes to cool and spread!
If you hadn’t noticed, I’m on a creamy kick. Enjoy the vast amount of cream cheese while you have one week left of enjoying fattening foods!
