Wicked Good Pasta Salad Recipes for Summer
Who doesn’t love a cool, refreshing pasta salad in the summer time? It’s something you can make for the whole week, it’s satisfying, yummy and healthy! Check out our favorite pasta salad recipes – of course with a suggestion of wine to pair it with!
Mediterranean Pasta Salad
Ingredients:
- 1 Box Bow Tie Pasta
- 2 Cucumbers, Diced
- 1 Small Carton of Grape Tomatoes, Sliced Down the Middle
- 1 Can of Black Olives
- 1 Container of Crumbled Feta
- 1/4 Cup Chopped Red Onion
- Olive Oil
- Salt & Pepper
Directions: Cook pasta and let cool in fridge. Once cool, add in a little bit of olive oil, salt and pepper, and mix. Add in the remaining ingredients (including extra olive oil to decrease dryness) and serve. Try it with: Wicked Chardonnay – Unoaked with flavors of tropical pineapple and peach. Wicked tasty with light pasta dishes.
Caprese Pasta Salad
Ingredients:
- 1 Box Rotini
- 1 Container of Mozzarella Balls, Cut in Halves
- 1 Can of Pesto
- Chopped Basil Leaves
- 1 Container of Grape Tomatoes, Sliced Down the Middle
- Olive Oil
- Salt & Pepper
- Balsamic Glaze
Directions: Cook pasta and let cool in fridge. Once cool, add in a little bit of olive oil, salt and pepper, and mix. Add in half of the jar of pesto and mix again. Add in tomatoes, mozzarella, and any additional pesto desired. Upon serving, top with the balsamic glaze and basil. Pair with: Wicked Sauvignon Blanc – Grassy, crisp and tangy, with a blast of quenching grapefruit.
Kale Caesar Pasta Salad
Ingredients:
- 1 Box Bow Tie Pasta
- 6 tbsp Mayo
- 1/3 Cup Grated Parmesan Cheese
- 1 tbsp Dijon Mustard
- Olive Oil
- Salt & Pepper
- 1 Bunch of Kale
Directions: Cook pasta and let it sit in the strainer. In a bowl combine the mayo, mustard, parmesan, olive oil, and salt and pepper. Mix, and then toss in kale. While pasta is still warm, combine the mixture. Once it has been mixed, let cool for at least 30 minutes in the fridge. Serve with: Wicked Rosé – Delightful with fresh cherry, strawberry and citrus flavors and bright berry aromas.
Avocado Pasta Salad
Ingredients:
- 1 Box Penne
- 2 Medium Avocados, Pitted and Chopped
- 6 Mini Baybel Swiss Cheeses, Chopped
- 1 Container of Grape Tomatoes, Sliced Down the Middle
- 6 Strips of Cooked Turkey Bacon, Chopped
- 1/4 Cup Chopped Red Onion
- Olive Oil
- Salt
- Pepper
Directions: Cook pasta and let cool in fridge. Once cool, add in a little bit of olive oil (the avocado will make the dish creamy), salt and pepper, and mix. Add in ingredients and mix. Serve with Wicked Pinot Grigio – Fresh, bright and packed with intense citrus, green apple, yellow pear and lemongrass.
And you’ll have pasta salad for days! Gotta stock up on that wine!
